My mother used to make lentil soup for New Year’s Eve. I don’t know her recipe, but it was thick and we would pour vinegar on top of it. I guess it was supposed to bring good luck and that is why it was eaten at midnight.
I didn’t make anything fancy. I just simmered the beans in my broth. The first taste was not exactly enjoyable. I added some fresh basil and scallions. I was tempted to add bacon, but I resisted. That was definitely an improvement.
I had followed the directions on the bag – simmer for 10 to 15 minutes. I think that was not enough. I hadn’t had more than a few spoonfuls before I was tired of chewing, so I put it back on the stove for another 10 minutes.
There was no liquid remaining and the consistency was much more palatable. I wouldn’t say I am a huge fan of lentils, but they are not bad. I bet they’d be better with bacon.
I have decided that I will be doing my weekly weigh-ins on Wednesdays so come back and see how I have done.
